The romaine lettuce belongs to the botanical family of Composite and cultivation occurs mainly in countries with a Mediterranean climate. Falls into the category of leafy vegetables, as the only edible part of the plant are the leaves, the latter grow almost upright to a height of 40 cm and form a long and narrow head very compact, average weight of 300g. In older varieties, in which the inner leaves with the maturation not close to form a heart (the heart), the tufts are bonded to obtain a white heart. The most recent cultivar instead close by itself, enclosing the heart inside, and do not require ligation. The leaves of romaine lettuce are thick and crispy and for this reason well-suited to be stewed. The clump of romaine lettuce is the basic ingredient of a classic of Mexican and American, the Caesar Salad. In Italian cuisine is generally used for salads, and is preferred by many for its stronger flavor and greater consistency of its leaves.
